Cinnamon Raisin Bread

Ingredients:

  • 3 cups bread flour
  • ¼ cup sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ tsp salt
  • 1 cup warm milk (110°F)
  • 1 egg
  • 2 tbsp unsalted butter, softened
  • 1 cup raisins
  • 2 tsp ground cinnamon

Instructions:

  1. In a large bowl, combine the bread flour, sugar, yeast, and salt.
  2. Add the warm milk, egg, and butter to the dry ingredients. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. During the last 2 minutes, knead in the raisins and cinnamon.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
  5. Punch down the dough, shape it into a loaf, and place it in the greased loaf pan.
  6. Cover with the lid and let it rise until it reaches the top of the pan, about 30 minutes.
  7. Preheat the oven to 375°F. Bake with the lid on for 25 minutes, then remove the lid and bake for an additional 10-15 minutes until the top is golden brown.
  8. Remove from the pan and let cool on a wire rack before slicing.
