Cinnamon Raisin Bread
Ingredients:
- 3 cups bread flour
- ¼ cup sugar
- 1 packet (2 ¼ tsp) active dry yeast
- 1 ½ tsp salt
- 1 cup warm milk (110°F)
- 1 egg
- 2 tbsp unsalted butter, softened
- 1 cup raisins
- 2 tsp ground cinnamon
Instructions:
- In a large bowl, combine the bread flour, sugar, yeast, and salt.
- Add the warm milk, egg, and butter to the dry ingredients. Mix until a dough forms.
- Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. During the last 2 minutes, knead in the raisins and cinnamon.
- Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough, shape it into a loaf, and place it in the greased loaf pan.
- Cover with the lid and let it rise until it reaches the top of the pan, about 30 minutes.
- Preheat the oven to 375°F. Bake with the lid on for 25 minutes, then remove the lid and bake for an additional 10-15 minutes until the top is golden brown.
- Remove from the pan and let cool on a wire rack before slicing.
