I am replacing old cookware and I ordered this 11 inch tart pan. It is made from carbon steel and is free from PFOA, BPA, and PTFE. It is rust resistant. It evenly browns tarts and quiches. They release without sticking. I had no problems with leaks when baking. I washed by hand and it cleans up easily. The price is affordable for the quality of the pan. Great gift for any baker or house warming.
I have several smaller tart pans and this one completes a full set. I make a variety of different dessert tarts and many call for different size pans so now I have all sizes covered. I would not ever use a tart pan that did not have a removable bottom but obviously you have to be careful not to push up on the base when moving the pan into or out of the oven. So far, nothing has stuck to the pan but it is still pretty new. Yes, I wash it in the dishwasher and it cleans up nicely.
Love this pan - I make quiche about once a month and usually don't use a pan where the bottom can be removed (I generally use a pie plate or cake pan), but I don't know what I was waiting for; the quiche is so much easier to remove after it's cooked from this pan. I made a simple ham, cheese and onion quiche earlier today and it couldn't have been easier with this pan. I made the ingredients as I usually do, pressed out the pie crust, added the various goodies (caramelized onion, cheddar cheese and smoked ham) and then added the egg mixture. As the pan is a little shallower than the ones I usually use, it took slightly less egg mixture and cooked about 15 minutes faster, but a far more elegant-looking quiche! The photos are of how it looked coming out of the oven and then how it looked when it came out of the pan after it cooled. The pan is non-stick so super simple to get the quiche out of the mold and then off the base plate and really easy to clean. My new go-to quiche pan. Really happy with this find!
